Vegetable Pakoras Recipe

Ingredients
- 1lb Baigan, thin strips
- 6oz Onion, thin strips
- 6oz Cauliflower, thinly chopped
- 1 tbsp Garlic, minced
- 2 tsp Ginger, minced
- 1tbsp Pimento, minced
- 1tbsp Bandania, chopped
- 1 cup Channa Flour
- 2 cups Flour
- 1cup Water
- 2tbsp Baking Powder
- 2tsp Baking Soda
- 1tsp Salt
- 2tsp Ground Geera
- 1tsp Coriander
- 1tsp Cinnamon
- Small Bowl of Tamarind and Mango Dip or Tomato and Cilantro Dip.
- 1 cup Oil
Directions
- Chop and bleed vegetables for about an hour, you can do this by generously sprinkling salt and tossing together to evenly coat it and let it spring water.
- Pat veggies and season with garlic, ginger, pimento, bandania, geera, coriander, cinnamon and set aside.
- In a separate bowl mix together flours, baking powder, baking soda and salt. Add water and mix until a smooth paste is formed.
- Mix in the seasoned veggies until incorporated and set aside to rest.
- Hot oil and fry a small spoonful of the Batter until golden brown and drain on a paper towel.
- Serve with Tamarind and Mango Dip or Tomato and Cilantro Dip.
