Ingredients

  • 1lb Baigan, thin strips
  • 6oz Onion, thin strips
  • 6oz Cauliflower, thinly chopped
  • 1 tbsp Garlic, minced
  • 2 tsp Ginger, minced
  • 1tbsp Pimento, minced
  • 1tbsp Bandania, chopped
  • 1 cup Channa Flour
  • 2 cups Flour
  • 1cup Water
  • 2tbsp Baking Powder
  • 2tsp Baking Soda
  • 1tsp Salt
  • 2tsp Ground Geera
  • 1tsp Coriander
  • 1tsp Cinnamon
  • Small Bowl of Tamarind and Mango Dip or Tomato and Cilantro Dip.
  • 1 cup Oil

Directions

  1. Chop and bleed vegetables for about an hour, you can do this by generously sprinkling salt and tossing together to evenly coat it and let it spring water.
  2. Pat veggies and season with garlic, ginger, pimento, bandania, geera, coriander, cinnamon and set aside.
  3. In a separate bowl mix together flours, baking powder, baking soda and salt. Add water and mix until a smooth paste is formed.
  4. Mix in the seasoned veggies until incorporated and set aside to rest.
  5. Hot oil and fry a small spoonful of the Batter until golden brown and drain on a paper towel.
  6. Serve with Tamarind and Mango Dip or Tomato and Cilantro Dip.
