Roasted Provisions with Creamy Tamarind & Mango Dip

Ingredients

  • 1½ cups Frozen Sweet Potato
  • 1½ cups Frozen Dasheen or Cassava
  • ¼ cup Coconut Oil or Soya Oil
  • 1 tablespoon Rum Flavoured Hot Sauce (Optional)
  • Salt and Black pepper for taste
  • ½ cup Mayonnaise
  • 2 heaping tablespoons Tamarind & Mango Dip  

Directions

  1. Thaw the Frozen vegetables just until they can be cut in half.
  2. Quickly rinse, pat dry and place in a bowl.
  3. Preheat the oven to 400 degrees F.
  4. Add the Oil and a little salt and black pepper to the provisions. Mix well.
  5. Add the Rum Flavoured Hot Sauce.
  6. Toss to evenly distribute among the provisions.
  7. Place in an even layer on a greased baking sheet
  8. Roast in the preheated oven for 20 – 25 minutes or until the provisions are cooked through.  Remove.
  9. Meanwhile mix together the Tamarind and Mango Dip with the mayonnaise.
  10. Place the provisions on a serving platter and serve with the creamy dip.
